Everyone needs a go-to recipe that is deceptively easy and always a crowd pleaser. This is one of mine. You mix everything together, spread out on a large sheet pan, and you have yourself a winner every time. Great for brunch or a snack. And be prepared to give a bunch away too because this recipe yields a ton. I got it from a Scrabble friend, Marilyn, who brought them to a tournament once. I don’t know if it is hers or if she got it from somewhere… I just know I do not deserve the credit. But trust me, you will want to credit someone for these… good once they cool, but be sure to eat some as soon as you frost them while they are still hot.
3 eggs 1 tsp baking soda
2 c sugar 2 tsp cinnamon
1 1/2 cups oil 1/2 teaspoon cloves
1/2 cup nuts 1/2 teaspoon nutmeg
1/2 cup coconut 1 teaspoon salt
1 tsp vanilla 2 cups chopped apples
3 cups flour
Beat sugar and eggs well, add oil, beat again. Mix together all dry ingredients. Add this mixture all at once to sugar and eggs, add vanilla and mix again. Stir in chopped apples.
Spread mixture in greased and floured 11 x 15 cookie sheet (or two smaller ones).
Bake at 325 for 40 minutes.
While still warm, drizzle glaze over top (1 or 2 cups powdered sugar and enough
milk to be a little runny).
